Watermelon Mojito

5-6 1" cubes of fresh watermelon
1.5 oz. Appleton White Rum
1 oz. simple syrup
Soda water
Mint leaves

Place watermelon and simple syrup in the bottom of a soda glass and muddle. Fill the glass with ice. Add the Appleton White Rum and top off with soda water. Gently mix and garnish with fresh mint leaves.
