Tangerine Chicken Salad

Salad ingredients:
3 cups green cabbage
3 cups Romaine lettuce
3 cups sliced carrots
3 cups sliced Julienne strips
2 grilled chicken breasts, sliced
1/2 cup sliced red pepper
2 Tablespoons slivered green onions
Cilantro to taste
2 mandarin oranges, peeled and sliced

Dressing ingredients:
1 Tablespoon chopped fine green onions
Chopped ginger to taste
1/2 cup orange juice
5 Tablespoons oil
1 1/2 teaspoon sugar
1/2 teaspoon coarse salt
1 Tablespoon rice wine vinegar

Directions:
1. Mix cabbage, Romaine lettuce, carrots, Julienne strips, chicken, red pepper, slivered green onions and cilantro together in a large bowl.
2. Once mixed, divide mixture onto 2 large plates.
3. In a separate bowl, mix together the chopped green onions, ginger, orange juice, oil, sugar, coarse salt and rice wine vinegar to make the dressing.
4. Pour dressing onto salad plates over greens. Place mandarin oranges on top of salad for presentation and an extra bit of flavor.

Recipe yields 2 entree-sized salads
