Signature Hawaiian Martini at Roy's of Newport Beach

Roy's Signature Hawaiian Martini


2 ounces strained pineapple vodka (see recipe below)
1 ounce Stoli Vanil vodka
1 ounce Malibu coconut rum

Place ice in a martini shaker. Add ingredients and shake vigorously. Strain into a chilled martini glass and garnish with a pineapple wedge.

Pineapple Vodka - make ahead
1 bottle Skyy vodka (750 ml)
½ fresh pineapple, skin removed, cored, and coarsely chopped

Place the pineapple in a covered, quart-sized glass jar or pitcher. Pour the vodka over, cover and refrigerate for 4 days, allowing the pineapple to steep with the vodka. Strain before use.
